KD's BEST Oat Bran Walnut Muffins
1 1/2 cup oat bran
3/4 cup oat bran flour
1/4 cup chopped walnuts (walnut oil is good for cholesterol)
1 tbsp baking powder
1/4 cup craisins or raisins or other dried fruit
1/4 cup brown sugar
1/4 cup honey or molasses
1 1/4 cup skim milk
3 beaten eggs
3 tbsp olive oil
Preheat oven to 425ºF
In a large bowl combine oat bran, flour, baking powder, dried fruit, sugar, and walnuts.
Mix eggs, milk, oil, and honey and blend in oat bran mixture.
Line muffin pan with paper baking cups and fill with batter.
Bake 15 to 18 minutes. Test with toothpick. It should come out moist but not wet.
Cool muffins in pan.
Muffins can be frozen and warmed in microwave.
