The Yummy Alternative to Mashed Potatoes
I LOVE mashed potatoes! Don't you?
But there's a HUGE problem with those mashed potatoes in that it's a food screaming with a high glycemic load that stimulates large amounts of insulin secretions from your pancreas, called a "spike"; over time it'll eventually put you on the road to type 2 diabetes. It also make you fat.
When you stimulate too much insulin, in response to a high glycemic index meal like those potatoes, it lowers your blood sugar by allowing glucose to enter the cells, where it's burned as fuel for energy. But over time, a lot is left over, which remains doing the other things insulin does - like depositing FAT.
Therefore, it's very wise to avoid, or at least minimize, those high glycemic foods, like sugar, pasta, cookies, cakes, and those yummy mashed potatoes.

Mashed cauliflower! It tastes great, it's VERY healthy, it has a very similar texture and taste to mashed potatoes and it's glycemic index is LOW.
It's easy to make. Here's how you do it:
- Get a fresh head of cauliflower or a bag of frozen cauliflower segments.
- Boil them in organic chicken stock. Chicken stock is made with chicken, onions, celery, carrots, and a few spices. It has only 10 calories in a cup, almost no fat, no carbs, no sugars, and 2 grams of protein. It gets absorbed by the cauliflower and gives it a great taste.
- When the cauliflower is soft, mash it with a mixer, until it has the consistency of mashed potatoes.
Maybe add a little garlic and some olive oil INSTEAD of butter or margarine or Smart Balance. Garnish with some chopped scallions. Add some Greek Yogurt, which tastes remarkably like sour cream, to complete the illusion of real mashed potatoes.
